Clean Eating: Salmon On Arugula Salad

Here's a simple, and deliciously fresh recipe. One of my favorite go-to dinners for eating clean!

You will need...

  • A Portion Of Salmon
  • Dijon Mustard
  • Horseradish Sauce
  • Capers
  • Cracked Black Pepper
  • White Wine or Water
  • Extra Virgin Olive Oil
  • Lemon
  • Optional: Fennel, Parmesan Cheese, or Fresh Figs

Step 1. Place salmon in fry pan.  Spread Dijon mustard and horseradish sauce on top of salmon.  Sprinkle a few capers on top and a little pepper. Add water or white wine to pan.  Cover and cook on medium to your liking.

Step 2. Clean arugula and cut off stems.  Place in a bowl. 

Step 3. Remove the skin on the salmon and place on top of the arugula. Whisk extra virgin oil and lemon and pour on top of salmon and salad.

Nice additions to this salad are crumbled parmesan, figs, or shaved fennel.

Enjoy and feel good about eating this healthy, flavorful meal!
