Today I'm sharing one of my favorite healthy recipes. It's perfect for breakfast, lunch, or dinner.
You will need...
- Summer Squash
- Artichoke Hearts
- Straw Mushrooms
- Olive Oil
- Salt & Pepper
Step 1. Spray a fry pan with non-stick spray.
Step 2. Use a wide vegetable peeler and make long ribbons by peeling the zucchini and summer squash lengthwise. Place the ribbons in the fry pan with a little olive oil and cook on medium-high heat until they sweat.
Step 3. Cut up artichoke hearts, straw mushrooms, and basil and add to the fry pan. Reduce heat to medium and cook everything until slightly soft.
Step 4. Crack eggs on top of the vegetables and cover with a lid or a piece of foil until the eggs are cooked to your preference. Season with salt & pepper to taste.
Step 5. Serve on a pretty plate along with fruit, a pepper biscuit or bread for a healthy delicious meal for anytime of day.
NOTE: You may notice that I do not give the exact amount for each ingredient. I "wing it" based on how many servings I am making. The important thing is to use fresh ingredients and as much as you like and want to eat. Feel free to experiment. Enjoy!
